Tomato Quinoa Salad is a great summer salad. It’s good for you and super tasty. Great side dish for BBQs or parties, deliciously simple!
Summer Salads are what I love to eat when the weather heats up. Sometimes this is a backfire on me because I’m eating salads that have more calories than the Steak! Tomato Quinoa Salad is a delish cold summer salad, but has the bonus of being good for you and NOT BAD! WOOHOO (see it’s pretty easy to make me happy).
Tomato Quinoa Salad is a pretty versatile dish – you could serve it with everything from Ribs to Fish. So if you make too much? Who cares? Serve it again tomorrow! I love discovering dishes that I can make for a variety of occasions, recipes that will get gobbled up!
I don’t eat quinoa every day, but I think I should. What do I love about it? It really takes on the flavor that you need it to. You can have sweet quinoa, savory quinoa, spicy quinoa, etc. This quinoa in Tomato Quinoa Salad just really tastes like summer. I used a hint of lemon and a bit of garlic – that together with the basil makes just a fresh tasting quinoa. LOVE IT!
Part 25 of why I love Tomato Quinoa Salad is that it was a super simple salad to throw together. It can be made ahead of time because the longer you let it sit, the longer it absorbs and marries all the flavors. LOVE dishes like that. Because it’s quinoa you could serve this as a main dish because of all the natural protein in quinoa. It’s great if you’re a veggie or if you’re having a little BBQ Party, definitely have a big bowl of it for your friends who don’t eat meat.

Tomato Quinoa Salad
Ingredients
- 4 C cooked quinoa
- 1 pint of grape tomatoes (yellow, red or both)
- Fresh Basil to taste (at least 1 TBSP chopped - I used 2-3 Tbsp)
- 3 Tbsp Lemon Juice
- 2-3 Tbsp Olive Oil
- 2-3 tsp minced garlic
Instructions
- Mix all ingredients together
- Let mix together in fridge for at least 1 hour before serving
