Are you ready for the New Year? Have you brought in 2016 with a bang yet? I love a New Year, it’s a new beginning. It’s the perfect time to revamp your goals (don’t call them resolutions!), it’s the perfect time to start a new project, and it’s a fantastic time to revisit taking care of yourself.

I’m sure you’ve read my blogs before where I talk about how BAD I am at breakfast and lunch for MYSELF. My kids? got them. I even manage to get my husband the right stuff. For me? Nothing/nada. I am horrible. One of my HUGE goals of 2016 is to have my lunches and breakfasts ready to go when I get up in the morning.

So I have a few treats in the post for you. 1 an incredibly awesome muffin recipe (seriously it’s yum) and 2 – a quick and easy guide to making some really delish, but really easy to go lunches (or eat them at home either way). So there will be no excuses. You will eat well and you will be happy. So sit back and enjoy – and then bake. Don’t forget to bake these Peanut Butter Strawberry Muffins. You’re going to love them.

So first let’s get to business. You know I like to pack a nutritional punch in a lot of things I bake. Especially when I’m trying to make lunches and snacks. I just recently discovered Jif Peanut Powder. Have you seen it? It’s EXACTLY what I needed to get my baking and New Year’s goals off to an amazing start. I’m not going to lie I’ve thrown it in a smoothie and it was amazing, but I knew that Jif Peanut Powder could help me in other ways! Jif Peanut Powder has no added sugar or salt – I’m going to say that again:

Jif Peanut Powder has NO ADDED SUGAR OR SALT.

I feel like I can be done no? It also has an amazing peanut flavor. I am in LOVE! There’s a chocolate flavor too (I bought both can you blame me???) I have to say that Jif Chocolate Peanut Powder contains semisweet chocolate and a dash of sugar, but it’s worth it – same great flavor and still helping me meet those New Year’s goals!  WINNER!

I RAN to Walmart – honestly not so much running but I walked fast (goals!). I thought that the Jif Peanut Powder might be with some of the other powders, but I found it with the Peanut Butters – so check there are your Walmart first!

So you’re on board right? You’re running to get your Jif Peanut Powder at Walmart? That’s established. Now let’s move on to my amazing muffins. The muffins? The inspiration is a plain old Peanut Butter and Jelly Sandwich – one of my favorites. I didn’t want to use jelly though because again – I love that nutritional punch in food, so real strawberries and Jif Peanut Powder it was. My kids ate these (the ones I didn’t stash in the fridge for my lunch) immediately, so I’m going to recommend that you double the recipe. This recipe makes 12 muffins (it is a tight dough – be prepared it’s not runny in any way – but it’s so good you won’t care).

Ok on to the recipe (keep scrolling I’m going to show you how to pack some amazing lunches below).

Peanut Butter Strawberry Muffins 1

Ok so first you’re going to have to gather some ingredients we’re listing them first:

  • 1/2 C Jif Peanut Powder
  • 1 1/4 C flour
  • 1/3 C sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 beaten egg
  • 3/4 C Silk Almond Milk
  • 1/4 C cooking oil
  • 1/2-1 C Strawberries, chopped

Mix your wet ingredients together and set aside. Mix the dry ingredients in a big bowl.

Preheat your oven to 400 degrees and use some cupcake liners to put into a muffin tin (12 muffins)

Mix your dry ingredients together and then make a whole in the middle. Pour your wet ingredients into the whole and mix. DO NOT OVER MIX. Just get all the dry wet. It will be lumpy and thick – that’s OK!

Fold in Strawberries gently.

Spoon into muffin tins (about half way).

Bake for 15-20 minutes until cooked thru.

Ok I promised to show you how to make a great weeks worth of lunches! So here we go.

First I used This Veggie Soup Recipe. It’s perfect for my New Year’s goals and it’s SO EASY to make. I put it on the stove before I made my muffins and it was done by the time the muffins were (ok maybe a few minutes off – but close!)

Lunches for a Week

Then I made a salad. I used this recipe for dressing (you’re going to love it). Here’s the trick – put the salad dressing at the bottom of whatever bowl you decide to use. Next put down Tomatoes or Cucumbers or something that won’t wilt in the dressing!

I picked two things to make for lunches and one thing to bake for breakfast or snack (depends on the day). That’s what I suggest. One salad and one hot dish of some sort. That way you get to juggle different foods and you’re not stuck with the same thing every day. The salad was so easy, but honestly? The soup was too. And the muffins are too easy and delish to not make!

 

Repeat to yourself – making things easy to grab in the morning will help you with your NEW YEAR! I’m so pumped. I will bring it if it’s ready, I will not make it in the morning! So if you’re like me – get it ready on Sunday.

Lunches for a Week 3

I even bagged up some fruit and veggies to grab and stuff in my lunch box for easy snacks (this worked great by the way – my husband grabbed, I could easily throw them into my kids lunches – it’s perfect!).

Making lunches ahead of time is as easy as cooking a couple of things and making sure to put them into to go containers!
