Apple Onion Soup I know it might sound like a different combination – but it is a delightful combo that you should try. I add cauliflower to my soup because I like to bump up the nutritional value of this soup – it’s a great way to get your veggies in! If you really don’t like cauliflower it’s ok if you don’t add it. I think it adds to the soup, but plain apple onion soup is delicious as well – I’ve done both!
I first had Apple Onion soup at my previous work. It was such a wonderful soup I knew I had to try to recreate it at home. I think I’ve come close to the original and we gobble it up.
I use chicken broth, but if you’d like to make this a true vegetarian meal please feel free to substitute a vegetarian stock! This is a hearty soup that is perfect for the main course as well as a side (I serve it instead of a salad often). I can’t say enough good things about making this soup! You can even double the recipe and freeze half of it!
