Sour Cream Chocolate Chocolate Chip Banana Bread is a somewhat-healthy dessert in our house. This chocolatey banana bread is not a fresh fruit salad by any means, but it is a great option for dessert or an extra special breakfast.
I found a recipe I liked, but wanted to make it healthier by using whole wheat flour and extra bananas. I prefer extra dark cocoa in this recipe, but you are of course free to use whichever kind you prefer. Just make sure that it is unsweetened cocoa powder. My daughter will not touch banana bread if it has nuts in it, so we decided to skip the pecan or walnut pieces, but feel free to add 1/4 a cup to 1/2 a cup of nuts to the recipe.

Sour Cream Chocolate Chocolate Chip Banana Bread

Ingredients
- 1 stick softened salted butter
- ½ c sugar
- 1 egg
- 3 large ripened bananas mashed
- 1 t vanilla
- 1 c whole wheat flour
- 1 t baking soda
- 2 T extra dark cocoa powder
- ½ c sour cream
- 1 c dark chocolate chips (mini will work as well, but I prefer regular sized ones in this recipe)
Instructions
- Preheat over to 350℉
- Grease a 9×5 loaf pan, or 2 mini pans with non-stick spray.
- Cream the butter and sugar together.
- Stir in the egg, mashed bananas, sour cream, and vanilla until well blended.
- Add baking soda, cocoa, and whole wheat flour.
- Mix everything until well incorporated.
- Add chocolate chips.
- Pour batter into loaf pan(s) and bake for 45 minutes for a loaf pan or 30 minutes for a mini loaf pan until a tooth pick inserted in the center come out clean.
- Remove from oven and let it cool ten minutes before removing from the pan.

I definitely did something wrong because this turned out to be a gooey mess. I cooked it for about an hour and a half and the insides were still mush. I had substituted margarine for the butter, otherwise I followed the instructions completely. Could this be the cause?
I personally feel that margarine doesn’t bake the same. sorry it didn’t turn out!

Sounds delicious! What is the cook time if I make these into muffins instead of bread? Banana bread never turns out well for me – always too gushy in the middle.
