I absolutely love pulled pork sandwiches. This recipe is now a family favorite in our house. It is so simple to make, and if your family doesn’t like spicy then you can lessen the chipotle powder, or go with different spices if you want a more plain kind of pulled pork. I changed up the recipe just a bit from the original 40 meals in 4 hours post but not much. I thought it was going to be blah with just a dry rub, but it really had a kick in the taste department but it wasn’t too much either. Perfect for a weekend lazy dinner. Enjoy! Do you freeze the pork with the rub? I am looking to make ahead and freeze, not just easy crock recipes! 🙂

Stephanie- I did not freeze it with the rub. I applied the rub just before I stuck it in the crock pot. I don’t see why you couldn’t apply the rub before and freeze for later. Let me know how it comes out if you do!

Mary Beth- nope no liquid needed. The juices from the roast and the sweat/water from the onions make enough in my opinion.

Is the roast thawed or frozen when you put it in the crock pot? (Same question for your chicken recipes!)

I have made the pulled pork with both frozen and thawed pork roast. The cooking times in my opinion varied slightly but not enough to keep me from cooking a frozen roast. I believe the chicken was frozen but I will have to check with my fellow bloggers.
