This time of year I seem to always have sweets in the house – even if it’s not an actual holiday. And, my family is chocolate chip-aholics. Seriously. Throw a chocolate chip in there and they will gobble it up! This recipe seemed to be just what we needed this week to have a little dessert, but mom didn’t have to spend 5 hours in the kitchen making it!
These are really easy – and incredibly delicious! I hope you like them like we did! My family can gobble up a batch of cookies in no time. Do you have a cookie monster in your house? Mine should be my kids but it really is my husband! He loves a cookie! And these delicious Chewy Peanut Butter Oatmeal Chocolate Chip Cookies were totally his new favorite. I love it when I make him something he loves to be honest, and don’t worry – the kids loved them too! Everyone will.
One of the fantastic things about Chewy Peanut Butter Oatmeal Chocolate Chip Cookies is that they seriously hit everyone of our favorite tastes. Have a peanut butter lover? Done. Can’t do a cookie without a chocolate chip? You got it. And I threw in oatmeal to call them healthy (joking). But oatmeal gives it that fresh from grandma’s feel! (if you’re a grandma now you HAVE to bake these!)

Dark Chocolate Coconut Macaroons
Chewy Peanut Butter Oatmeal Chocolate Chip Cookies
Ingredients
- 1 C butter, softened
- 1 C peanut butter (I used creamy)
- 1/2 C white sugar
- 1 C brown sugar, packed
- 2 eggs
- 2 tsp vanilla
- 1 C flour
- 1/2 tsp baking soda
- 1 tsp salt
- 3 C quick cooking oats
- 1 C semi sweet chocolate chips
Instructions
- Preheat oven to 325 degrees
- Beat butter, peanut butter, sugars and vanilla until creamy
- Add in eggs and beat again
- Add flour, soda, and salt and mix again until combined
- Stir in oats and chocolate chips
- Drop by the spoonful onto ungreased cookie sheet
- Bake for 16 minutes
- Let cool on pan at least 5 minutes before moving to rack to cool (the cookie might look slightly undone when pulling out of the oven. It will "set" while cooling on cookie sheet)
