Dark Chocolate Coconut Macaroons

You’re going to love love love making these cookies! Dark Chocolate Coconut Macaroons are super yum and everyone will be so pleased! My kids gobbled these up like you wouldn’t believe!

Dark Chocolate Coconut Macaroons | Who Needs A Cape?

Coconut and chocolate is one of my favorite combinations!  These macaroons are one of my favorites and are simple to make!  Makes about one and half dozen, so you might want to double the recipe to make sure you get one (seriously your family will eat them all before you get a chance). I like serving them if I’m having guests, or just making them for school lunches. Honestly they are so good that you’ll want to make them all of the time!

Dark Chocolate Macaroons are easy enough to make, but everyone you serve them to will think you are a Rock Star (or a Food Network Chef). Either way I’m totally fine with that 🙂

Dark Chocolate Coconut Macaroons

Dark Chocolate Coconut Macaroons

Ingredients

  • 2/3 cup all-purpose flour
  • 5 1/2 cups flaked coconut
  • 1/4 tsp salt
  • 1 14 oz can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 8 oz of melted dark chocolate

Instructions

  1. Preheat oven to 350℉
  2. Line cookie sheets with parchment paper
  3. Stir together the flour, coconut and salt
  4. Stir in the sweetened condensed milk and vanilla
  5. Make sure it is well blended, you might need to use your hands
  6. Shape about 2 tablespoon-sized amount of the mixture into a ball, you can use a scoop if you prefer a more uniform look
  7. Bake for 11 to 15 minutes depending on the size until coconut is toasted
  8. Have a cooled cookie sheet lined with wax paper
  9. Let them cool about 15 minutes before dipping the bottoms in the melted dark chocolate and place them on the wax paper covered cookie sheet
  10. Once they are all dipped drizzle the remaining chocolate over the top
  11. Place in fridge until chocolate is hardened
