Blueberry Crumble Pie

I LOVE blueberry season – it’s so wonderful.  It’s truly one of the times when living in the Garden State (home of the blueberry) comes in handy!

This recipe can be adapted to fit any berry though – I am not a cherry pie fan, but cherries would be great in this!  Adapt as you like!

One word to the wise – allow this pie to cool completely before cutting.  If you want it warm it will still taste amazing but it will be runny!  If you put it in the fridge until completely cold it will be “set” and not runny at all!

Yield: 1 Pie

Blueberry Crumble Pie

Blueberry Crumble Pie
Prep Time 15 minutes
Cook Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • 5-6 C Blueberries
  • 1 T lemon juice
  • 1 t Vanilla
  • 1/2 C flour
  • 1/2 C brown sugar
  • 1/2 C sugar
  • 1/2 stick (4 T) butter, softened
  • 1/2 - 1 C flour
  • 1/2 C brown sugar
  • 1/2 C sugar
  • 1 pie crust

Instructions

  1. Preheat oven to 350
  2. Mix berries with lemon juice, vanilla, 1/2 C flour, 1/2 C brown sugar and 1/2 C sugar and set aside
  3. Using a fork or pastry cutter mix butter, 1/2 C flour, 1/2 C brown sugar and 1/2 C sugar. Add extra flour until it is mixed thoroughly and crumbly
  4. Place pie crust into 9 inch pie pan and flute
  5. Pour in berry mix
  6. Top with crumble mix until berries are almost all covered
  7. Bake at 350 for 1 hour

    This is a wonderful recipe! Making the pie with freshly picked blueberries gives the pie extra flavor. My husband and father n law ate one whole pie each!
