Lemon Cape Cod Cocktail

Everyone loves a Vodka/Cranberry cocktail otherwise known as a Cape Cod. It’s a simple, light, refreshing drink. It’s easy to make. It’s a great party drink.

I like to spice up my cocktails so they aren’t the same all the time. I have my “regular” drink and then there are days when I need a change. The Lemon Cape Cod is the perfect drink for those change days!

Previously I had made lemon head vodka. I was trying to decide, besides drinking it straight, what I should make with it.  It turned out VERY yellow so I had to consider that when I was trying to decide what to mix it with. It was also sweet so I didn’t want to add more sugar to the drink.

Then I made Cranberry Juice Ice Cubes. Again — do I now just pour the lemon head vodka directly onto those ice cubes (it did happen by the way and it WAS yummy). But I decided to add a mixer to it and here’s the recipe.

Ingredients

• 2 ounces of Lemon Head Vodka (if you haven't made Lemon Head Vodka use 1 1/2 ounces of Absolute Citron and a splash of either lemonade or simple syrup)
• Club Soda
• Cranberry Ice Cubes

Instructions

1. Fill your glass with Cranberry Ice Cubes
2. Pour in Lemon Head Vodka (or equivalent)
3. Top off with Club Soda
4. Garnish with lime
