Parmesan Meatloaf is a delicious alternative to traditional meatloaf. With classic Italian flavors and cheese, it takes comfort food to the next level.
I’ll admit I didn’t think I was a fan of meatloaf, in fact, I had not eaten it since I was probably 10 years old. Truth is my mom isn’t the greatest cook, she will happily admit this fact. So the version that last entered my mouth 30ish years ago was somewhat of a mysterious burnt concoction to which I never wanted to revisit.
Fast forward to the fall of 2012, I’m perusing Pinterest, which I sadly spend WAY too much time on, (but that’s a whole other issue) and I see a recipe for a meatloaf that actually looked appetizing to me. It had a cheesy top, which is always good in my book, I went ahead and pinned the recipe to my “Beef…Its What’s For Dinner” board and kept on pinning. When my co-bloggers decided to do Meatloaf-Mania I had to admit I had neither tasted meatloaf in a very, very long time and had never attempted to make this classic dish. Today I present to you, my version of meatloaf, which my husband and 18-year-old son gobbled up, my youngest 2 children weren’t fans, but my 15-year-old daughter told me I had permission to make it again…and as, for me, I really enjoyed it! I can see why it’s a favored comfort food; I now understand the magic of meatloaf.
- 1 lb ground turkey
- 1 lb ground beef
- 2 eggs
- 1/4 cup Panko breadcrumbs
- 1/2 t dried basil
- 1/2 t dried thyme
- 1/2 t oregano
- 3 T fresh chopped parsley
- 2 garlic cloves, minced
- 1/2 cup diced onion
- 1/2 t salt
- 1/4 t ground pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup marinara sauce
- 1 cup shredded Italian cheese blend, divided
Directions:
Preheat oven to 350 degrees. Lightly spray loaf pan with non-stick cooking spray. In a large bowl combine ground turkey, ground beef, eggs, breadcrumbs, basil, thyme, oregano, parsley, garlic, onion, salt, pepper, Parmesan & 1/2 cup of the Italian cheese. Gently mix. Place mixture into the greased loaf pan & form into a loaf shape. Top the meatloaf with the marinara sauce. Place filled loaf pan on a baking sheet and bake in preheated oven for 75 minutes (this may vary according to your oven). Remove the meatloaf and sprinkle the top with the remaining 1/2 cup of Italian Cheese. Place meatloaf back into the oven and bake until the cheese is melted approximately 3-4 minutes. Remove the meatloaf from the oven and allow to rest 5-10 minutes before serving/slicing.

I’m wondering if you have tried making this as the mini-meatloaf (beefcakes)? If so, would you prepare and cook it the same way or would it need to cook longer because of the turkey? 🙂
Lori
Stacie, I personally haven’t tried making this as mini-meatloaf, not yet at least. Since they would be smaller, I’m assuming they would require less cooking time. Let us know if you give it a try.
