I’m at it again! You know I LOVE LOVE LOVE my slow cooker. I can’t help it. The last thing I want to do on a Wednesday (I actually dislike Wednesday not Monday – weird right?) is come home after work and set out to cook a big dinner. I need to have my freezer full of tasty treats I can just throw in the slow cooker in the morning. I actually really like the taste of pork done in the slow cooker – and I love the flavors of Lime and Soy – SO…Slow Cooker Marinated Pork Chops were born.
Slow Cooker Marinated Pork Chops have a couple of things going for it – let’s break it down. One this is really easy to put together. Two the meal is freezer friendly (YEA!). Three it has a lot of flavor. Four it’s actually a good protein choice in terms of calories. Five it’s really tasty – did I say that? oh and easy!
If you’re not going to freeze this you could definitely put it together the night before and let it marinade extra. But, if you don’t want to do that it’s ok too – sitting in the slow cooker cooking is enough time for the marinade to work.
