Well it’s that time of year. I’m ready to hit the road for the holidays! As usual I’m heading to Michigan for Thanksgiving…750 miles. THIS year it’s 3 kids (all boys thank you) and just mom! My husband can’t come this year and I’m getting a bit panicky. My boys are awesome on road trips, but I’m so used to having my husband and we have a routine – this year I’m changing it up to make the road trip super fun to cover for daddy not being able to come! I have all kinds of tips, a recipe and fun ideas for you! Keep reading and change up your Road Trip FUN!
The one thing that didn’t change about my routine was making my first stop to prep for my trip to Walmart Automotive Care Center for my Pennzoil® Platinum Full Synthetic Motor Oil. So after you get your Pennzoil® Platinum Full Synthetic on Rollback (Save that money you guys) you need to get yourself organized. Yes it takes some work to make a Road Trip fun with kids. It takes a bit of planning.
The first thing that I did was decide what treat I was going to make. I settled on making Pumpkin Chocolate Chip Muffins (So good – recipe below). The second thing I did was ask my kids what THEY wanted – yes let them have some input!
I love my boys – the big thing on the list was eat and drink. They are so funny! Movies made it too. So yes the Pumpkin Chocolate Chip Muffins were super important. And movies – we have a DVD player and I’m not afraid to use it. So I purchased a new movie that they didn’t have previously and I’ll surprise them with it on the road! FUN! HAPPY KIDS!
I also took the time to make a special Road Trip Playlist! My oldest will be running the show since I’m driving and he’ll love playing DJ and having a special playlist! Just a fun thing to do: reshuffle your own songs, add a couple of new ones and the kids will be happy!
I pack a big bag of snacks for my kids (some cut fruit and treats for fun) and a bunch of juice boxes (HUGE TREAT). This year like I said I baked too! I made these delish Pumpkin Chocolate Chip Muffins. I made mine mini muffins, but you could make full size muffins. This recipe is awesome because it made a BUNCH. Don’t need a bunch? It’s easy to cut it in half too.
You’ll need:
4 eggs
2 C sugar
1 can (15 oz) Pumpkin
1 tsp vanilla
1 1/4 C vegetable oil
3 C flour
2 tsp baking soda
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
2 C semi-sweet chocolate chips
Instructions:
Preheat oven 400 Degrees
Mix together all wet ingredients until well blended
Add in all dry ingredients (not the chocolate chips yet)
Fold in chips gently
Use liners in muffin pan and spoon in batter (3/4 full is good)
Bake in oven (13-15 minutes for mini’s, 18-20 for full size)
