We all have those nights when you have about 5 minutes to get dinner on the table right? and everyone in the house is STARVING? I know I have plenty of those nights! AUGH! So, Spicy Sloppy Joe Chicken Pasta won’t necessarily be on the table in 5 minutes – but it is a very quick and very tasty dinner. I think it took me about 25 minutes from start to finish – and I’m in love with that!
Just because a meal is quick doesn’t mean it doesn’t have flavor. I needed something that fit the following – 1 quick, 2 – easy, 3 – yummy (including my fussy family’s taste buds). So I went to Walmart and looked for what I could buy to make this imaginary easy yummy quick dinner. I found what I was looking for. I found the a can of RO*TEL and 2 cans of MANWICH. I knew I had a great idea.
My wheels in my head were turning yelling #YesYouCan. My family loves sloppy joes. My husband and I love a little spice in our life and as long as it isn’t TOO hot my kids will gobble it up too. So while at Walmart I grabbed some chicken tenders (you know the boneless chicken breasts cut up in smaller pieces so they cook faster) and some whole grain pasta and I had dinner. EASY.
So this recipe is so easy (don’t worry it’s below in a printable form!).
Put your water on to boil for the pasta. I like to throw some sea salt in (just a pinch) but that’s just me.
While your pasta is boiling go ahead and start your chicken. I used about 2 pounds of chicken tenders. If you don’t want to pay for the cut up tenders, go ahead and buy boneless skinless breasts just cut them into about thirds. It will just add a little bit of time (but if you have it – go for it!). Place chicken in a pan (one that has a lid) and turn up the heat to medium high. Set the timer and let it sit covered (DO NOT PEAK) for 5-7 minutes. Then Flip, recover and let it go about 5 more minutes.
Uncover your chicken and add in about 3-4 garlic cloves that you have minced. (hey is your pasta boiling yet???)
Let chicken and garlic cook for about 2-4 minutes (uncovered this time). Add in 2 cans of MANWICH and 1 can of RO*TEL. Let simmer for about 5 minutes occassionally stiring.
Drain your pasta and add it to the sauce and chicken. Give it a good toss and serve. Dinner really is that incredibly easy. You can serve it with a salad or steamed veggies and you’re absolutely golden! Seriously? #YesYouCan! I promise! Dinner on the table in under 30 minutes! It’s an awesome thing (and let me add that your family is going to love it.).
One final note – if you and your family really love spicy? Go ahead and do 2 cans of RO*TEL. My husband and I would have loved it like that, but then I would have lost my kids eating dinner!

Spicy Sloppy Joe Chicken Pasta
Ingredients
- 2-3 pounds of chicken tenders
- 1 can of RO*TEL tomatoes
- 2 cans of MANWICH
- 3-4 cloves of garlic, minced
- 1 package of whole wheat penne pasta cooked
Instructions
- Saute chicken tenders on med high heat for 5-7 minutes per side (keep covered)
- While chicken is on second side, uncover after 5 minutes and add 3-4 cloves of garlic. Continue cooking on med high heat for another 2-4 minutes (or until chicken is cooked to temperature)
- Add in cans of RO*TEL and MANWICH and reduce heat to simmer for about 5 minutes
- Toss in cooked pasta and serve
