Mint Chocolate Cookies are amazing! Perfect for Santa to fill up on – and all of his elves – you are going to need to make these this year!

It’s not Christmas without some delicious cookies. Mint Chocolate Cookies fill this need (and are way easy as a bonus).  And, Mint is my boys total favorite!  I think Santa likes them too (at least that’s the rumor!)  Mint Chocolate Cookies are a total snap to make and Santa apparently likes that too – who knew?  I think Mrs. Clause made sure to tell him about it.

Yes – these are made up to look Christmassy, however, don’t limit yourself.  These could be made for most holidays and you know what?  A good week-end too!

You could totally change this cookie to suit your preference. They could be red instead of green. They could use dark chocolate or regular chocolate instead of white (I just think white is so beautiful at Christmas time – and yummy too). I liked the combo that I used here – but it’s totally up for interpretation.

PS. Mint Chocolate Cookies are definitely Santa-worthy! And the kids can really help and have fun with these (it’s not complicated).

Yield: 3 dozen cookies

Mint Chocolate Cookies

Ingredients

• 2 sticks of softened butter (1 Cup)
• 3/4 C sugar
• 3/4 C brown sugar
• 2 Tbsp mint extract
• 2 large eggs
• 2 1/4 C flour
• 1 tsp baking soda
• 1 tsp salt
• Green food coloring
• 1 bag of white chocolate chips to melt (12 ounces)
• 2-4 crushed peppermint candy canes

Instructions

1. Preheat oven to 375 degrees
2. Beat together butter and sugars, adding eggs and extract until well mixed
3. Add in flour, soda, and salt
4. Add in food coloring until desired color is reached
5. Drop by spoonful onto ungreased cookie sheet
6. Bake for 9-11 minutes
7. Let cool on rack
8. Melt chocolate until spreadable
9. Dip cooled cookies in chocolate (or spread chocolate onto half of cookies)
10. Immediately dip into crushed candy canes
11. Let harden on wax paper
12. Store in air tight container
