Friends, I have to tell you I’ve recently discovered a frozen treat that knocks ordinary ice cream sandwiches out the door. Have you tried FatBoy Ice Cream Sandwiches? I bought a box at Sam’s Club because my family loves frozen treats during the summer. As soon as I opened the box I knew we were in for a treat!!!
FatBoy Ice Cream Sandwiches aren’t your average ice cream sandwich, in fact they are quite the opposite. The name FatBoy describes these perfectly…they are THICK and oh my word so delicious!!!
This All-American ice cream treat has been been around since 1925. You know an item is amazing when its been around THAT long. Conjuring up the nostalgic feel of years gone by, biting into a FatBoy Ice Cream Sandwich makes you feel like you’ve been transported to a time when quality and quanity meant something. Fat is definitely a compliment when referring to these fantastic treats!
As truly amazing as FatBoy Ice Cream Sandwiches are on their own, I decided we’d “sprinklefy” ours a bit! Walk into my house and some days you’d think that sprinkles are one of the main food groups in my house. We use a lot of sprinkles on a variety of food items…my kids love them. This is how Ice Cream Sandwich Sprinkle Pops came about.
I decided to take the already delicious FatBoy Ice Cream Sandwiches and put a lollipop stick in the center of the ice cream. Next I drizzled on some self-hardening chocolate topping and then the sprinkles were sprinkled, generously I might add.
Now since it is July and the outside temp is hovering around 90 degrees I popped these badboys into the freezer for a few minutes before serving them to my kids. It allowed everything to set up nicely and the stick was nice and STUCK.
And there ya have it…two happy girls! They loved the fact that these were on sticks, it made them easy to devour! Of course they loved the sprinkles too which is not at all shocking.
Back to why FatBoy has stolen our hearts at my house…just look at that picture above. Nothing wimpy about that! There’s a big old layer of creamy vanilla ice cream surrounded by two generous layers of chocolate.
There’s some serious “bang for your buck” with FatBoy Ice Cream Sandwiches. Skinny isn’t their thing and for good reason, sometimes you just need a little “old school cool”. This is a great idea to dress up an ice cream sandwich. Probably less messy too. Eating it off of a stick vs it melting in your hands.
My kiddo would love this! He likes anything that’s got a lot of bright colors and who doesn’t like ice cream?! I will definitely do something like this with my kiddo. Summer is almost over so I want to soak and everything I can and ice cream is one of those.

Putting an ice cream sandwich on a stick was a great idea. The chocolate sauce and sprinkles make it so bright and colorful, too. I’ll have to remember this the next time we buy some!
