Slow Cooker Stuffed Peppers are going to become your favorite Slow Cooker Meal! Easy with that awesome comfort food taste – you’ll love these every time!
I have 2 little chefs in my family that LOVE helping mom whenever they can in the kitchen (#3 isn’t that into it unless we’re making dessert). Making dinner together with my boys has become a must for me – but it’s not always easy to find a meal that they can actually help with (hey I don’t need to make MORE work for myself). Making Slow Cooker Stuffed Peppers with Uncle Ben’s Ready Rice (Whole Grain or White) makes my life EASY! And you guys know I love easy.
Like most of my awesome cooking projects with my boys, this one began with a quick trip to Walmart to pick up my ingredients – I selected Uncle Ben’s Ready Rice Whole Grain Brown for my stuffed peppers, however if you desired you could try the Whole Grain Medley or a White – but make sure to get the Uncle Ben’s Ready Rice.
There are a lot of reasons to use Uncle Ben’s and all of their products – first let’s start with I can’t make rice. Yeah you heard me – I am horrible at it. So Uncle Ben’s Ready Rice (Or boil in a bag) is my friend. Number 2? It’s quick. Stuffed Peppers require the rice to be cooked, but I don’t want to spend all day cooking rice and THEN the dinner – nope Uncle Ben’s Ready Rice is awesome and cooks in the microwave FAST (like in 90 seconds kind of fast)!

Here’s your ingredients List:
- 5-6 Large Bell Peppers (I had to squeeze the 6th in so make sure you have room in your slow cooker)
- 1 1/2 pounds ground turkey breast (you could use beef if you like)
- 2 small (or 1 large) sweet onions, chopped and cooked until tender
- 3-4 cloves minced garlic cooked for 1 minute (just browned)
- 1 1/2 C Uncle Ben’s Ready Rice Whole Grain Brown (Or any other flavor ready rice you might desire) COOKED and ready to serve
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/2 C grated Parmesan cheese
- 2 tsp dried basil
- 1 15oz can tomato sauce
Trim the tops off of the bell peppers and scoop out the insides.
Place the bell peppers in your slow cooker and put aside.
Mix together all remaining ingredients EXCEPT TOMATO SAUCE in a large bowl
Scoop mixture into each pepper and cover with tomato sauce
Cook on Low for 5-6 hours

Ingredients
