My husband LOVES himself some chicken. I mean loves. I mean he could eat it every single night love. I would rather have a steak, a ground been casserole, pizza rolls…So when I make chicken it has to be somewhat interesting or I’m out. I saw this recipe on Pinterest (LOVE LOVE LOVE) and thought maybe it looked good. My friend Katie (and fellow blogger) had also made it but suggested wrapping it in bacon. Seriously? SHUT UP. Bacon makes everything better! I also added onion, well just because.
So I started with a 4 ingredient meal (original recipe above) and ended up with 6 ingredients. Still super easy. Just more exciting to me.
Easy Bacon Wrapped Garlic Chicken
Ingredients
- Chicken I have used both 4 boneless/skinless breasts and by accident 4 skinless but with bones thighs. Boneless is better, but boned was still good
- Bacon (I use Turkey Bacon. Little less on the calories and perfect for this kind of recipe)
- 4 tablespoons Olive Oil
- 3 Tbsp Chopped Garlic (um...I buy the already chopped I can't lie)
- 4-5 Tbsp Brown Sugar
- 1 onion 1/4 finely chopped, the rest just sliced.
Instructions
- In a small pan sugar saute garlic and finely chopped in the olive oil
- Stir in brown until melted (I let mine bubble a little)
- Wrap 4 chicken breasts completely in Bacon
- Add sliced onion to the pan
- Cover completely with sauce
- Bake at 350 (uncovered) for about 45 minutes or until chicken is done.
Eat and enjoy!
