I’m about to lose my mind you guys…or I should say I WAS about to lose my mind. Then I discovered Kidfresh. You guys you’re going to love me when you get done reading. I have been running around like a crazy woman and with the holidays around the corner??? I needed to get dinner under control. Honestly. I’ve been a big mess and needed to gain some control before my already busy schedule gets even more busy with holiday shopping, parties, cards, all the stuff! So I think we all know how much I love the holidays! I’m your Holiday GIRL! I LOVE it. The ONLY thing that I don’t love is the time that it takes from me. I take 30 minutes to wrap a gift (yes I’m crazy), I send out cards to anyone I’ve ever said hello to! All of these things take up my time. I had 30 minutes to do some shopping (waiting for practice to be done), so I naturally ran to my Walmart and started brain storming. What if I gave myself a few short cuts. I bought just about every single variety of Kidfresh meals that I could get my hands on. You guys you have to make a choice. Do you want to tell your kids that Kidfresh meals are nutritious? Or would you just like them to eat it in the dark? I, to be truthful, didn’t tell my kids that there are up to 1/2 Cup of veggies in each serving of Kidfresh meals. I didn’t mention that Kidfresh meals are best-in-kids nutrition. I didn’t tell them that Kidfresh meals are consistent with USDA dietary guidelines for all children. They didn’t need to know (yet). They DID see that it was easy smeasy to get Kidfresh onto the table for them. They know mom’s busy – they liked this part. I did fess up to all the amazing healthy qualities of Kidfresh AFTER they told me how much they loved their Kidfresh Muy Cheesy Quesadillas (and then another night their Kidfresh Wagon Wheels Mac + Cheese). They still loved it!

I didn’t forget! I’m going to share my tips for Easy Healthy Dinners whether it’s during the holidays or just during a busy season in your life! My first tip is set aside a couple of hours every week. Put it on your calendar. No you can not go to soccer practice right now. No you can not go Christmas shopping during this time – it’s your meal prep time and it’s sacred! You HAVE to make that few precious hours a priority! I chose Sunday Afternoons because I try to be at home on Sunday afternoons no matter what.
PS make sure to grocery shop before your meal prep time. Head to Walmart, buy some great fruit and veggies and some Kidfresh. Come home. Get cutting and washing. That’s right. Cut up those fruits and veggies RIGHT THEN. I have a great container that holds them and fits in my fridge. Don’t have one? No worries. Use your chinese food containers, baggies, bowls – whatever you have will work. I cut up cucumbers, broccoli, cauliflower, strawberries, apples (hit them with some lemon juice). I cooked some carrots this week (other weeks I’ll cook broccoli, green beans, etc) so I can have a hot veggie.
See? Once you have some easy fruit and veggies to pile on your kids plates? Dinner isn’t hard. You can keep them healthy. I can have dinner for my kids in 5 minutes and I love it. They love it! (another hint? use some of your cut up fruit and decorate yogurt! My kids gobble that up! ANY WAY to sneak in more healthy!).
