The Minty Leprechaun Cocktail is a tasty adult beverage that can either be a cocktail or even dessert! So yummy! Great St. Patrick’s Day treat!
So I’m a wee bit Irish, and as the calendar heads towards St. Patrick’s Day I find myself enjoying all things Irish Cream. I’ve shared with you in the past some of my favorite recipes that incorporate Baileys Irish Cream: Cream Cheese Frosted Baileys Brownies, and a yummy Tropical Baileys Colada, Yes you can say I enjoy a bit of Baileys and that’s why I’m even more excited to share my latest creation…The Minty Leprechaun Cocktail.
If you grew up like me, sometime in February every year you’d head to McDonald’s and order a bright green Shamrock Shake. As a kid, it was something to look forward to, as we didn’t get shakes all that often. Let alone a vibrantly minty creation. I’ll never forget thinking I was big stuff with a Shamrock Shake.
Fast forward to adulthood and here I am all giddy about this cocktail/dessert/shake. Call if what you’d like but its yummy and super easy to prepare. Get your blender out and whip one up, you won’t be sorry. I chose to use Baileys Mint Chocolate Irish Cream, have you tried this? It has just a hint of minty goodness! Throw in some ice cream and if you’re really celebrating maybe just a bit of vodka too, told you it was easy!
I even got a little fancy and decorated the rim of the glass. You can do this too, simply use 2 small plates, drizzle chocolate syrup in a circle on one and some sprinkles on the other. Before (this is important) adding your shake to the glass, turn the glass upside down and coat rim in the chocolate sauce. Now move onto the other plate and dip chocolate covered rim into the sprinkles, snazzy right???
Other delicious minty treats:
- 2 oz Baileys Mint Chocolate Irish Cream
- 1 cup vanilla ice cream
- 2 T milk
- Mix all ingredients in a blender until combined. If you desire a thinner consistency add more milk.
Optional: Decorate the rim of the glass with chocolate syrup and sprinkles if desired.
