Lemon Parmesan Orzo
Does the dinnertime funk happen in your house? It happens here from time to time, I get stuck in a rut preparing the same items over and over.
Mostly I prepare dishes that are family approved, that’s “mom-speak” for my kids will actually eat them. When I find myself getting stuck in that rut, I often look around the grocery store for inspiration. It is a great place to gather inspiration from, it is filled with food after all.
On this particular night, I prepared one of our easiest and most flavor loaded slow cooker dishes on Who Needs A Cape? I chose Easy Crockpot Mongolian Beef for dinner, it is amazing and you definitely should add it into your menu ASAP!
Now that I have the main course decided upon, there’s always the sides. We get stuck in a rut on those too. For this meal, I chose to whip up Lemon Parmesan Orzo, a very easy side dish that my oldest daughter just adores.
One of the reasons she enjoys it so much is because she can make it on her own with limited cooking abilities. She’s 18 and learning her way around the kitchen, this recipe is the perfect side dish to start with. With a touch of lemony flavor and subtle hints of parmesan, it tastes great, with a variety of entrees.
