There’s nothing like the feeling of being organized. For me I sleep better, can relax and breathe a tad easier when life is at least a bit organized. One of the things that I’ve found to help during busy back to school mornings is prepping some lunch items ahead of time. Lunches in our home are simple, I’m not a complicated lunch maker. First off my kids won’t eat “fancy” food, they have simple palates. I’d prefer to send lunches to school that will actually get eaten and not thrown into the trash. I stick with the basics and that seems to make everyone happy.
Simple organization in my refrigerator keeps me on task when packing school lunches. Drinks are organized, fruits are pre-cut and organized, as are refrigerated snacks. Some other easy things that I include in their lunches are tortilla roll ups and pasta salads, both can easily be made ahead of time. For the snack portion of their lunches I like to Make Ahead Lunch Snack Mixes. Other ideas for lunches:
- 2 cups Pepperidge Farm® Goldfish Crackers
- 1 cup oats cereal
- 1/2 cup yogurt covered raisins
- Mix all ingredients together and keep in resealable container or storage bag.
