Slow Cooker Mushroom Quinoa is a new favorite of mine. I love the fact that it can be a side, a lunch or a full dinner on it’s own. And, I LOVE that it came together in the slow cooker (my first attempt too so I was a bit nervous about it!). I was talking on our Facebook Group (come over it’s fun there!!!) about healthy packed lunches – and I brought this 3 days (hello healthy and filling at the same time!).
Have you tried quinoa? Slow Cooker Mushroom Quinoa would be a great way to try it (or if you already know how much you like quinoa this is a great way to enjoy it in a new way!). I love the fact that quinoa is such a complete food. It has protein, it has fiber, and it’s just good for you. I also like taking a break from the rice side dishes (don’t get me wrong I love myself some rice – it’s just nice to have a change of pace).
One thing I do want to warn you about. Usually with the slow cooker if it stays on a bit longer – that’s ok. Quinoa? I don’t trust it. It should really not be on low longer than 6-6.5 hours (high around 3). Use this great tip that many of our readers do – buy a cheap light timer and plug your slow cooker in to it if you have to leave it to cook. That way you are sure to not come home to a burnt slow cooker and dinner!

Don’t buy a cheap light timer! They can’t handle the load of a crockpot. They do sell appliance timers. But one of those instead. You really don’t want an electrical fire due to an electric overload stemming from your crockpot.

huh – I didn’t know that – so many people are using the light timers.

The timer you’re using MAY be a “light & appliance” timer. You want to check on the rating of your crockpot and the rating of the timer. You need to be sure you’re not using a light duty timer for a crockpot. Heating elements draw much more energy than a light bulb.

Just tried this Yum!!!! Make sure to thoroughly rinse the quinoa before cooking or you will end up with a funny bitter taste
