Then, of course, there’s the deciding what to make or take along to these spring flings. Light … easy … yummy. Chicken Salad with Apples and Cranberries fits those essentials … and then some!

I love my chicken salad with cranberries and apples, so I’ve put this recipe together to reflect that love. I also love pairing it with hearty multi-grain bread, but it is as equally good scooped onto a salad or eaten all on its own with just a fork. It makes for a great lunch during the summer and with the substitution of mayo with a low-fat version, this is a tasty and healthy option.

Chicken Salad with Apples and Cranberries

Ingredients

  • 1.5 lb. boneless, skinless chicken breasts, cut into chunks
  • Chicken bouillon cube
  • 2 tbsp. olive oil
  • 2 tbsp. red wine vinegar
  • 1 tsp. dried garlic
  • 3/4 c. mayonnaise, or to taste
  • 2 Gala apples, diced
  • 2 Granny Smith apples, diced
  • 1/4 c. dried cranberries
  • 2 tbsp. green onion
  • 1/4 tsp. salt, or to taste
  • 1/4 tsp. pepper, or to taste
  • 1/2 tsp. oregano
  • 1/2 tsp. parsley
  • 1/2 tsp. dill weed

Instructions

  1. In medium fry pan, combine dry bouillon, olive oil, vinegar, oregano, salt, pepper and chicken and place over low heat .
  2. Simmer chicken over low heat, turning as needed until cooked (approximately 20 mins., depending on size of pieces).
  3. Remove chicken from pan and place on plate with paper towels; blot off excess oil.
  4. Once cooled slightly, break the pieces down by hand into smaller bits and place in a medium bowl.
  5. Add mayonnaise, apples, cranberries, green onions, parsley and dill. Mix thoroughly and chill slightly before serving.
  6. Sprinkle with additional spices before serving, if desired, and serve on your favorite bread or atop a salad.
