I have been trying to cut a lot of the excess foods — ok, mainly carbs — out of my life. It’s not so bad when you start to discover things like avocados — which, yes, are high in fat but they are an awesome fat and an awesome thing to eat. They are delicious and all natural right? I have had a tough time getting out of that mind frame that all high calorie or high fat foods are bad for you … but dishes like this are making it easier!
I also don’t want to diet traditionally. It makes me cranky — and no one likes cranky Heather. It also makes me instantly hungry. Eating a lunch like this? Makes me feel like I’m being naughty and eating whatever I want. It’s all about finding yummy wholesome foods for me.
The other bonus of this is that eating healthy doesn’t have to be extravagant or take long to prepare. I can make this for lunch in 5 minutes. I love that! Some days you don’t want to be cutting veggies or steaming forever in the kitchen. So I came up with this REALLY simple dish. It tastes extravagant but it isn’t!
- 1 ripe California Avocado, cut in half and pitted
- 1/2 a pint of grape tomatoes, cut in half or quartered
- 1/2 a cucumber diced
- small amount of red onion to taste
- 1/4-1/2 C of crumbled feta
- Mix all ingredients except avocado
- Place in avocado and enjoy!
