Looking for a satisfying casserole that your family will really enjoy? You’ve found it!!! Beefy Sour Cream Noodle Casserole has layers of creamy egg noodles and saucy beef & cheese, the results are a hearty dish that is completely delicious.

I love having a few go-to casseroles that I can have ready super quick without compromising on the taste. Beefy Sour Cream Noodle Casserole is just that.

It’s so warm and cozy and the perfect comfort food (honestly? For summer OR winter – it really doesn’t matter!). You’re going to love serving this to your family again and again. It’s just that good!

You can save this dish for Sunday dinners, but it comes together quickly enough to enjoy during the week too.  It’s just one of those dinners that are amazing on a sports night or as a sit-down everyone is here Sunday Dinner. I love dinners like that!

 

Serve with some Cheesy Beer Bread and a fresh salad and you’ll have a wonderful dinner.
PS~The leftovers (if there are any) are so good, you won’t mind one bit packing them for lunch the next day!

Beefy Sour Cream Noodle Casserole | Who Needs A Cape?

Beefy Sour Cream Noodle Casserole

Ingredients

  • 1-1/4 pound Ground Beef
  • 1 can 15-ounces Tomato Sauce
  • 3/4 teaspoon Salt
  • 1/2 teaspoon freshly ground Black Pepper
  • 1/4 teaspoon Lawry's Seasoning Salt
  • 1/2 teaspoon Garlic Powder
  • 8 ounces Egg Noodles (1/2 of a package)
  • 1/2 cup Sour Cream
  • 1-1/4 cup small curd Cottage Cheese
  • 1/2 cup sliced Green Onions
  • 1/2 teaspoon Garlic Salt
  • Freshly Ground Black Pepper
  • 1 cup shredded Sharp Cheddar Cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Brown ground beef until thoroughly cooked, drain fat from pan.
  3. Stir in tomato sauce, salt, pepper, Lawry's & garlic powder.
  4. Simmer on low until ready to use in casserole.
  5. Cook egg noodles according to package directions, drain.
  6. In large bowl stir to combine: sour cream, cottage cheese, green onions, garlic salt & pepper. Add in cooked egg noodles, stir together.
  7. In greased 13x9 assemble in layers. 1st layer 1/2 of noodle mixture, followed by 1/2 of meat mixture, and then 1/2 cup of shredded cheddar. Repeat all layers.
  8. Bake 20-25 minutes until cheese is melted and heated through.
  9. Serves 6

    OMG!!! This is the most AMAZING casserole that i have made in a while. Full of just warm and homey flavor. Great for this wonderful cool fall evenings or in the winter. This casserole will not let you down!! I am telling you it is jam packed with flavor and i like that the author of this recipe told us to stake it rather then mixing the mixture all together. I find it brings it more definition and more flavor. I did add a little bit of parmesan on top of the casserole, but either way delicious!! I would defiantly recommend this recipe for those family nights.

    So I finally made this and I loved it! I was leary about it because I just couldn’t picture how it would taste and my family hates cottage cheese. I never use ricotta either but that sounded better to me so i finally got it. I loved it but my daughter and husband said it was gross. Different taste buds I guess lol. More for me!

[…] So, did you know you could bake bread in your slow cooker?  I didn’t know this until recently, just another reason to love this small appliance that makes our lives so much easier.  The texture of these rolls is similar to bread baked in a bread machine, slightly dense, and the aroma from the Rosemary is amazing!  Now the only thing your slow cooker won’t do vs. the oven is brown the top of these rolls. Simple solution, you just pop them under the broiler in your oven for 2 minutes & the tops will be golden brown.  In 2 hours you’ll have delicious pull apart rolls that cook on the countertop, a great idea if you are using your oven for other dinner items and can’t reserve the space or time for traditional baking.  Serve these up alongside some Chunky Beef Stew or Beefy Sour Cream Noodle Casserole.
