Biscoff Chocolate Chip Cookies, these are amazing!!! This past summer I kept seeing all sorts of recipes on Pinterest with Biscoff as an ingredient, I started pinning some of them because they sounded really delicious. Still wasn’t sure what the heck this stuff was, but I was interested that’s for sure. It comes in two forms cookie and spread. In a nutshell the spread is made from crunched up European Speculoos cookies, which are a somewhat of a mild gingersnappy butter cookie, this is my own definition, by the way.
Biscoff cookies are known as the “airline cookie” because for years they have been given out on international flights. Well, guess what? I was lucky enough to score one small, and I do mean small little Biscoff cookie packet on a domestic Delta flight. Now normally, I do not like to try new foods (still kicking myself for missing out on sushi for the better part of my 20’s & 30’s, dumb move) so I was leery of opening the packet and taking a big old bite. Instead, I bit off a tiny little corner, and surprise, surprise!!! Cookie heaven!!! Now I knew what the fuss was all about and I immediately devoured the rest of the itty bitty cookie.
We’re now in the midst of fall, and this is my time in the kitchen. I found the perfect recipe and now wanted to purchase some Biscoff spread. Headed out to my favorite grocery store and was in the European food section which I was sure would have it…nope, not there. Then I put my thinking cap on (stealing this line from my 4-year-old) and headed to the peanut butter section because after all it is a spread, and there it was sitting on the top shelf waiting from me in the creamy or crunchy variety. The creamy type was what the recipe I had chosen called for, so into the cart it went. Now I headed home to tell my 15-year-old and baking accomplice about my find. She immediately dug out a spoon and had to try the creamy goop, her reaction was something like “Where have you been all of my life”!
It’s a delicious alternative to peanut butter, and for people like me who DO NOT understand the Nutella sensation it gives you something new to try in all sorts of yummy recipes. So try away, don’t be scared, Biscoff is amazing, try some soon, you’ll be thanking me!
Biscoff Chocolate Chip Cookies
1 cup butter, softened
2/3 cup Biscoff spread (I used creamy)
1 cup brown sugar
1 cup sugar
2 eggs
2 t vanilla
3 1/2 cups flour
1 t baking soda
1/2 t salt
1 cup chocolate chips
Preheat oven to 350 degrees. Cream together softened butter and Biscoff spread in a large bowl. Add in both sugars and cream again. Add eggs & vanilla, mixing well after each addition. Mix in flour, baking soda and salt, beat until well blended. Stir in chocolate chips. Bake for 8-10 minutes. Cool on cooling rack & enjoy!
