We all want to be that lady who brings an awesome dish to the neighborhood party right? I know I do. It takes some thinking – my neighbors are pretty awesome! I love serving summer dishes that aren’t so heavy and covered in mayo – because it’s different and refreshing! Quinoa & Pepper Pilaf fits all my needs for an awesome summer side dish (and it’s quinoa so really could be the main dish on it’s own!).
I was shopping at Sam’s Club (LOVE Being a member there) and I became inspired! Did you know that Sam’s Club is having Block Party Events at their stores? All you need to do is click HERE to find out when and where and what time! You’re going to want to go! I found the recipe for this amazing Quinoa & Pepper Pilaf from Sam’s Club. See? There is always inspiration at Sam’s Club for all it’s members! Using Swanson Broth and truRoots Quinoa to make a great side dish is all I need!

First things first, Swanson Broth is my go to broth at ALL times of the year (not just for the winter holidays). I mean it’s chefs favorite too! Can’t go wrong there with it’s fantastic flavor. I mean it’s Certified USDA Organic, Non-GMO Project Verified, and Gluten Free (there’s more – too many to list!) what’s not to love about all of that? Learn more about truRoots HERE. AND Pace Organic Medium Salsa is just my go to Salsa – it’s not too hot, not too mild so everyone in my family will eat. You guys what’s not to love?
To make Quinoa & Pepper Pilaf you’ll need: (if you’d like a printable recipe it’s below)
- 1 T olive oil
- 1 shallot, minced
- 2 cloves garlic, minced
- 1 cup red bell pepper, diced
- 1 cup yellow bell pepper, diced
- 1 cup uncooked quinoa, rinsed
- 2 cups Swanson® Chicken Broth
- 2 T parsley, chopped
- Heat olive oil in a 2-quart saucepan overmedium-high heat.
- Stir in the shallot and garlic. Cook for 2 minutes, stirring occasionally.
- Stir in bell peppers and quinoa and cook for 2 minutes, stirring occasionally.
- Stir in the broth and heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes or until the quinoa is tender and the liquid is absorbed.
- Stir in the parsley. Add additional seasonings if desired.
Yum! You’ll be the hit of any block party when you show up with Quinoa & Pepper Pilaf!
