I’m so excited to bring you these Cheesy Chicken & Poblano Nachos today! They are my entry into the 2016 Food Network’s Chopped At Home Challenge using Sargento® Shredded Cheese. You may recall that I participated in last years Chopped At Home Challenge with my 30 Minute Cheesy Chicken Fiesta Bowl, definitely a favorite at our house! So I was super excited to see what items were in my “Chopped” basket for this round. This years Chopped At Home Challenge required ingredients included: Sargento 4 Cheese Mexican Blend, Corn Tortillas, Poblano Peppers and Chicken Thighs.

When I saw the required ingredients my mind instantly went to nachos, but not just any nachos. I wanted nachos with layers and layers of flavor, and boy do these deliver. You have delicious roasted Poblano pepper, baked corn tortilla chips, seasoned chicken with bell pepper and onion, robust black beans and seasonings and of course topped with delicious shredded Sargento 4 Cheese Mexican Blend.

Now if you’ve never prepared your own baked tortilla chips or roasted your own peppers, DO NOT FEAR! These are both very easy to do, I’ve included instructions in the recipe portion under the NOTES section….you can do this and you will not regret giving it a try as the flavors far surpass the small effort involved.

Cheesy Chicken & Poblano Nachos

Yield: 4 servings

Cheesy Chicken & Poblano Nachos

Ingredients

  • 10 corn tortillas (See NOTES below)
  • 1 Poblano pepper (See NOTES below)
  • 1 T olive oil
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • 1 lb chicken thighs, boneless & skinless, diced into 1/2" pieces
  • 1/2 t garlic salt
  • 1/2 t cumin
  • 1/2 cup black beans, drained & rinsed
  • 2 cups Sargento 4 Cheese Mexican Blend

Instructions

  1. See NOTES below on how to prepare both corn tortillas and Poblano peppers.
  2. In large skillet over medium-high heat, saute onion and bell pepper with olive oil until softened. Add in diced chicken thighs, garlic salt and cumin. Stir occasionally while cooking. When chicken is cooked thoroughly, stir in black beans, cook 1-2 additional minutes, remove from heat.
  3. To assemble: place corn tortilla chips in a 13x9 baking dish. Spoon chicken mixture oven top of corn tortilla chips. Spoon roasted Poblano pepper over top of chicken mixture. Liberally sprinkle with shredded Sargento 4 Cheese Mexican Blend. Bake at 375° degrees for approximately 8-10 minutes until cheese is melted. If desired crisp cheese under broiler, watch carefully as this will only require 1-2 minutes at most.
  4. OPTIONAL: Top with sour cream, avocado, cilantro or salsa if desired.

Notes

To bake corn tortillas: Cut each tortilla into 6 wedges. Place on a baking tray lined with aluminum foil, do not let pieces touch. Brush on a light amount of foil and sprinkle with a tiny bit of salt it desired. Bake at 350° degrees for approximately 12 minutes until crisp. To roast Poblano peppers: Place peppers on baking tray lined with aluminum foil. Place under broiler on high, closest to heating element. Roast approximately 5-7 minutes until skin is nicely charred. Remove tray and using tongs, flip peppers over to other side. Roast remaining side 5-7 minutes until skin is nicely charred. Remove from oven, using tongs place peppers in a resealable plastic bag. Close bag & let steam 20 minutes. Remove peppers and gently wipe away charred outer skin. Cut pepper open and scoop out seeds with a spoon. Cut into 1/2" pieces.
