Healthy Pumpkin Parfait

Ingredients

  • 4 oz canned pumpkin puree
  • 4 oz plain or vanilla yogurt
  • 2 T honey
  • 1 t brown sugar
  • 1/4 t pumpkin pie spice
  • 3 T white chocolate chips
  • 1/4 cup graham crackers, crushed
  • OPTIONAL: whipped cream

Instructions

  1. Mix together pumpkin puree, yogurt honey, brown sugar and pumpkin pie spice.
  2. Layer in glass: pumpkin mixture, white chocolate chips, and graham crackers. Repeat layers.
  3. Top with whipped cream if desired.
  4. Serve immediately.
  5. 1 serving
  6. *** The pumpkin mixture will not be overly sweet. Add more honey or brown sugar if you desire a sweeter mixture.
