We LOVE pumpkin in our house – but I do NOT love pumpkin calories. Yes I’m never giving up pumpkin pie or pumpkin cheesecake balls – but to have pumpkin every day I have to make sure that it’s not overloaded with calories. Plus – my boys LOVE pumpkin too so anyway I can healthy up their lives? I’m in!
I use this recipe all fall – during the week – as a great snack or dessert for my family. On the week-ends? I might whip it up for breakfast. Pumpkin is SOOO good for you and it just has such a fantastic flavor. We all gobble this up on a regular basis! I’m secretly high fiving myself because I’m getting some really great food into my kids and they are high fiving me because they think they are getting a huge dessert all the time. I love it when a plan comes together!
