Lemon Sriracha Salmon is a quick healthy meal to throw together on any night.  I love how healthy it is and the flavors are AMAZING.  When I’m making this for my kids as well, I might limit the amount of Sriracha or eliminate it completely and it is still quite lovely.

Lemon Sriracha Salmon goes great with a variety of vegetables and/or grains.  We serve ours up with a mixture of brown rice and quinoa. This can be marinated longer, but just be careful not to over do it! This would go great with chicken as well, but I would definitely marinate for 24 hours.  Might have to try grilling some up!

Lemon Sriracha Salmon

Ingredients

  • 1 lb of salmon cut into filets
  • 4 T Butter
  • Zest of 1 lemon
  • Juice of 2 lemons
  • 2-4T of Sriracha (more or less depending on how much heat you prefer)
  • 4 gloves of garlic
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a skillet then saute the garlic in the butter for about 1 minute.
  2. Add the fish, lemon juice, lemon zest and Sriracha.
  3. Cook until salmon is done.
  4. 8-10 minutes depending on the thickness of the salmon and preference of doneness.
