These Apple Cranberry Crisp Pancakes are one of those recipes that just happened.  There was no creative planning involved, just a kid asking her mom for “pancakes, you haven’t made them in forever”!  So after being reminded that she “loves” them, I headed into the kitchen.  Next thing I know, my oldest daughter comes in and asks if they are going to be “apple pancakes”, well no, they weren’t but then I suddenly remembered I had some leftover Slow Cooker Apple Cranberry Crisp in the refrigerator.  Voila!  Spooned a little bit onto the batter cooking in the pan and here we are, a great new creation.

Great for autumn weekend brunch, you’ll get the flavors of apple, cranberry and the wonderful texture of homemade pancakes.  Now if I didn’t recommend these with a wonderful {copycat} Pumpkin Spice Latte, I wouldn’t be doing my job.  If you want all the flavors of fall, pair these 2 up and enjoy!

Apple Cranberry Crisp Pancakes

Yield: Approximately 10 pancakes

Apple Cranberry Crisp Pancakes

Ingredients

  • 3/4 cup milk
  • 2 T white vinegar
  • 1 cup flour
  • 2 T sugar
  • 1 t baking powder
  • 1/2 t baking soda
  • 1/2 t salt
  • 1 egg
  • 2 T butter, melted
  • 1/2 cup of Slow Cooker Apple Cranberry Crisp

Instructions

  1. Combine milk with vinegar and set aside to "curdle" approximately 5 minutes
  2. Combine flour, sugar, baking powder, baking soda, and salt in large mixing bowl. Whisk egg and butter into "curdled" milk. Pour the flour mixture into the wet ingredients and mix until most lumps are gone.
  3. Heat a large non-stick skillet, spray with non-stick spray.
  4. Pour batter in pan when hot (I like to use an ice cream scoop for uniform sized pancakes), spoon appoximately 1 T of Slow Cooker Apple Cranberry Crisp on top of pancake.
  5. When bubbles appear at surface, flip with a spatula. Continue cooking until brown on other side.
