Perfect Pasta Salad is one of our family’s favorite foods. We use it as a meal, as a side, or a snack. It keeps great in the refrigerator so I always double this recipe (sometimes if I’m having guests I’ll go ahead and triple it — but you’ll need a HUGE bowl!). I’m not going to lie – I also triple it just because I want a lot of it. (it’s not a lie I swear)

This recipe has a ton of flavor and it’s very simple simple simple (2 of my favorite things in a recipe!). Perfect Pasta Salad is probably my favorite Pasta Salad – and to be honest I could live off of pasta salad. So that’s saying a lot!

I usually make this recipe in the summer or in the early fall — but because it’s my husbands favorite — we have had it in the dead of winter — it’s THAT good! So serve it at your next barbecue, picnic or just a family meal! There was one Christmas that I asked my husband what he wanted for Christmas and he said “Your Pasta Salad” so I made it and we ate it on Christmas Day. Weird maybe, but proof as to how good Perfect Pasta Salad is! You’re going to love this dish!

Ingredients

  • 1 pint of grape tomatoes, halved
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1/2 to 1 red onion, chopped
  • 1 (16 ounce) bottle of Balsamic salad dressing
  • 1 box of noodles (I like rotini - either vegetable or whole grain but white would work)
  • 8 ounces of shredded Parmesan Cheese

Instructions

  1. Put all the chopped veggies into a dish (I use a 9 x 13 baking pan)
  2. Pour dressing over veggies, cover and let sit over night in fridge marinating
  3. The next day cook up the pasta to al dente
  4. Cool pasta by running cold water over and drain completely
  5. When pasta is completely cooled off add in dressing and veggies. Stir until well combined
  6. Stir in cheese
  7. Let salad sit an hour in fridge before serving
  8. Store in fridge covered
