I love having a delish salad for dinner in the summer – but it has to be filling or my family will be unhappy 😉  Bevin made Chipolte Lime Chicken Salad last year – and it’s about time I brought it back to re-share!  YUM Enjoy ~ Heather

Chipotle Lime Chicken Salad

 

This is one of my favorite favorite go-to easy healthy recipes.  You can also omit the chicken and make it a vegetarian dish or a side.  It can be served warm or chilled.  It is great chilled on a hot summer evening.

Chipotle Lime Chicken Salad

Yield: 8 servings

Chipotle Lime Chicken Salad

Ingredients

  • Chipotle Lime Chicken Recipe
  • 2 8.5 ounce microwavable bags of brown rice (I like these because they make the recipe extra simple)
  • 2 cups pico de gallo
  • 1 15 ounce can of black beans, rinsed
  • juice of 4 limes
  • 2 T olive
  • 2 bunches of chopped fresh cilantro (love this stuff, so I put tons in)
  • salt and pepper to taste

Instructions

  1. Dice the chicken
  2. Heat the rice
  3. Mix the chicken, rice, black beans, pico de gallo and cilantro
  4. Pour the lime juice and olive oil on and toss some more
  5. Salt and pepper to taste
  6. Chill for at least an hour if you are going for the cold salad
