I always love making cupcakes and cakes for my kids’ birthdays and this year I wanted to share these Easy Custom Cupcakes I made for my daughter’s 6th birthday party. I am not into fondant or doing overly complicated, fussy things for my kids birthday cakes or cupcakes, but I always try to do something a little bit more original. When my daughter wanted a My Little Pony themed party I started scouring the internet for ideas and found these cute little ring cupcake toppers to go atop the cupcakes on Amazon. These rings worked great for me and once I got them in the mail in just a few days I knew exactly what I wanted to do. I have seen the show many times thanks to both my son and daughter enjoying it. If you can’t find something to go with your theme you can also make your own cupcake toppers. I knew each pony had their own personality and thought why not color coordinate and match the tip I used for frosting the cupcakes. I also coordinated the cupcake cups to the pony. Left me with extras, but I now I will use them because I make cupcakes at least once a month. Don’t forget your pastry bags!
There were 18 rings, (I had two bags for our party) so I made a basic buttercream frosting and then used gel colors to match them up to each ring. I went to a local bake shop and bought sprinkles for a couple of the cupcakes and then just used some white sparkling sugar sprinkles for the others. I also bought one new tip at my local bake shop, but I am pretty sure you can find some decent ones at your grocery store if it has an extensive baking section. I love this idea because you can customize it to pretty much any theme. I used a box mix this time, and made my own buttercream. These are top heavy with frosting, so this is a rather large recipe for frosting making about 36 cupcakes.
