One of our favorite meals to have as a treat for a big sporting event are these  meatball subs.  I usually make them with minced turkey, but decided to try Lori’s Chicken Parmesan Meatballs recipe.  I only made the meatballs and didn’t use her portions for sauce and cheese on top of the meatballs.  I also made mine about half the size that she did.  I used four per sub and froze the rest after cooking.  We served these open faced and ate with knives and forks!

Open Face Chicken Meatball Sub

Ingredients

  • sub breads rolls
  • 1 sliced onion
  • 1 sliced green bell pepper
  • 1 sliced red bell pepper
  • 2 c pasta sauce of your choice
  • 1 c shredded mozzarella cheese
  • a sprinkle of parmesan cheese for each sandwich
  • olive oil for drizzling
  • 2 cloves of garlic

Instructions

  1. Make Lori's Chicken Parmesan Meatballs (I browned mine in a very hot pan first then put the pan straight into the oven for about 15- 20 minutes).
  2. Cut bread rolls in half rub the cloves of garlic on the sub rolls. Drizzle with olive oil oil then place in the oven to get the bread nice and toasty, about 10 minutes at 400℉
  3. While the bread toasts in the oven splash some olive oil in a pan and sautee the onions and peppers for about 5 minutes, frequently stirring (if your meatballs are done at this point you can use the same pan AFTER taking the meatballs out).
  4. When the bread is ready take the pan out of the oven and place the meatballs on top of the bread, then the sauce, cheeses and last the onions and peppers.
  5. You can serve immediately or place under the broiler for about 3 minutes to melt the cheese even more.
