Change up your holiday routine with some delicious Almond Green Beans with Caramelized Onions. Perfect for Thanksgiving or Christmas!I love green beans, but hate green bean casserole.  With the holidays coming I decided to try making this dish because I love all the ingredients in it and the green beans aren’t overpowered by cream of whatever you add to the casserole!  My kids will eat this too and just pick out the onions since they aren’t fans… yet.


Almond Green Beans with Caramelized Onions

Ingredients

  • 1 lb green beans, cleaned and trimmed
  • 1/4 c skin on sliced raw almonds
  • 1 T butter
  • 2 T EVOO
  • 1 large onions, sliced thin
  • 1 T chopped fresh thyme leaves
  • Freshly ground black pepper
  • salt and pepper to taste

Instructions

  1. Boil the green beans covered in water for about 5 minutes. Drain the beans and then run them under some cold water to stop them from cooking. Set aside in another bowl.
  2. Return the skillet you cooked the beans in and reheat over medium heat. Add the almonds and toast stirring every now and then for about 3-5 minutes. They should be slightly golden when ready.
  3. Remove the almonds from the skillet and save for later. Reheat the skillet and add the butter and olive oil, heating until butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize. This should take about 20 to 25 minutes. Add the thyme, and cook for another 5 minutes and then add the cooked cooled green beans and almonds. Season to taste.
