White Cake with Summer Berry Jam

I am a huge fan of White Cake. I know that so many people prefer chocolate, but I just find with white cake you can add delicious flavor all over the place – with an amazing frosting and with amazing filling. White cake can be dressed up – like I have dressed up mine to make White Cake with Summer Berry Jam. Berry Jam is a great addition to a great tasting cake!

My kids both have birthdays in the summer, so I’m always on the look out for a great Summer cake. (not that I need a season to eat cake, but you know). Adding the Summer Berry Jam just put this dessert over the edge. It was totally yummy and everyone who came to my daughter’s party just fell in love with it (me too!). I was really proud to serve this amazing tasting cake at her party (I LOVE when people gush over my baking don’t you?). So serve this up and everyone will fall in love with your food. It’s a show stopper for sure!

I have a summer birthday and I’m trying to convince my husband to make it for me this year (he’s assured me that I’m the baker not him). I’m pretty sure that I’m making this for myself this year (but it’s ok this cake is so worth it).

White Cake with Summer Berry Jam

    For the Cake
  1. I made the actual cake the day before the party.
  2. I buttered and then lined my heart shape pans and put them aside while I put the cake together.
  3. The cakes took roughly 25-40 minutes with the deeper and slightly larger pans.
  4. After the cakes had cooled completely I put them in the freezer wrapped well in plastic cling wrap and then placed inside a plastic container. **make sure that you take the cake out several hours before you plan on serving it, otherwise just chill for about 30 minutes in the freezer to make it easier to work with.
  5. For the filling I added the jams together into a sauce pan and heated them gently until they started to thin and made it easier for spreading.
  6. Turn the burner off and just let it sit and cool for about 30 minutes, stirring every few minutes.
  7. As the jam was cooling, I took my frozen cakes out of the freezer and leveled off the two layers.
  8. After getting the buttercream nice and fluffy (believe me all that whisking is worth it!), I put down the first cake onto the board and made a dam around the edge, so the jam filling wouldn't run over the edge.
  9. I filled in the jam on the middle of the bottom layer of the cake until it was just below the dam level.
  10. I then placed the second layer on top of the cake and pressed down ever-so-lightly.
  11. I then did a crumb coat and let that set in the fridge about 30 minutes.
  12. After 30 minutes it was time to frost the cake.
  13. I threw on some edible glitter and heart-shaped sprinkles and it was ready to go.
